Turkey Burgers and Grilled Sweet Potato

Looking for a healthy and YUMMY dinner idea for this weekend? How about some greek turkey burgers with a side of grilled sweet potato?! I can't take full credit for this recipe since I googled it, but I knew I had ground turkey meat and I figured some spinach and feta would be awesome with it. Here is the recipe I used (everything cut in half).
  • 1 egg
  • 1 clove garlic, minced
  • 2 oz feta cheese (I just sprinkled it in, I didn't measure)
  • 2/3 box of  frozen chopped spinach, thawed and squeezed dry
  • 1 lb. ground turkey
  • 1/2 cup bread crumbs?
Throw it all in a bowl and mix together with you hands. I added bread crumbs because the mixture was really wet. I didn't measure them, I just sprinkled them in until it was more of a hamburger consistency.

I grilled them for about 8-10 minutes on a medium-low flame.  Be sure they are fully cooked! *Sorry I didn't take pictures of the process!*

Also, last week when I was in Memphis, I ate dinner at Humdingers. It was pretty healthy (a little heavy on the oil) since I got grilled fish with a mango salsa and grilled sweet potato. The meal also came standard with rice, but I think next time I will upgrade to grilled zucchini instead. I was very intrigued by the grilled sweet potato and I was not disappointed! Of course I thought that grilling sweet potato is super easy, I can do that! Well, a few of them didn't quite make it...


Oops! Lesson learned: turn the flame down lower! I did get a few decent ones, but a few of the thicker pieces weren't cooked all the way through either. At least they look good!

  2. Yum! Obsessed with sweet potatos over here...have you tried the one's at Chili's yet? So good.
