Tough Mudder - Food- Sicilian Style Pasta

I made this recipe for dinner the night before my Tough Mudder. I wanted to make sure I had a solid combo of protein and carbs in my meal the night before the big day!

I don't remember where I got the inspiration for this dish, but I've made it a few times over the years and I really like it. It doesn't take much time or effort, but tastes delish!  This recipe isn't an exact science.  Once I've been making a dish for a while, I tend to measure like Rachel Ray...meaning, I don't really measure, I just "eye-ball it."

Sicilian Style Pasta (makes 2-3 servings)
  • 1 chicken breast (cut into bite-sized pieces)
  • Whole grain pasta (I used penne, bow ties are fun too!)
  • EVOO (a few swirls around the pan + extra to cook the chicken)
  • Minced garlic (1-3 cloves, depending on your taste)
  • Spinach (2-3 handfulls)
  • Sun-Dried Tomatoes (cut into slices)
  • Parmesan Cheese

  1. Cook the pasta according to the directions on the box. Once cooked, drain and set to the side.
  2. While the pasta is cooking, cook the chicken pieces in a large pan with some EVOO. Remove chicken and set to the side.
  3. In the same pan (or a new one if you like), put your heat on low. Swirl around the EVOO a few times in the pan, then add your minced garlic. Let the garlic cook into the EVOO for a minute or two. If you like an extra layer of flavor, add some crushed red pepper flakes with the garlic.
  4. Add the sliced sun-dried tomatoes and spinach. Let the spinach cook down. 
  5. Add the chicken and the pasta. If needed, add a little extra EVOO.
  6. You can add the parmesan cheese to the large pot or to individual servings. 

 Chicken was cooked and put aside, this is step 2 & 3.


Add spinach. 


Add chicken back. Then add pasta.


Volia!! Top with parmesan cheese for a simple, quick, easy, healthy dinner! Enjoy!!

  1. My husband really wants to do a Tough Mudder. I wish I could do it with him, but that's never going to happen! I envy your strength!! Way to go!

    1. You should tell him to do it! And its pretty cool for spectators too, you can totally go cheer him on!

  2. i think it would be fun to do a tough mudder but oh so very tough!! and i definitely think you need a team, it would be hard to go through all those hard obstacles by yourself without motivation. and man this meal looks great!
